Chin Chin

Ingredients
- 150ml whole milk
- 1 teaspoon of vanilla extract
- 400g of flour
- 100g of sugar
- 1 1/2 teaspoon baking soda
- 1 teaspoon of salt
- 2 teaspoon freshly grated lemon
- 1/2 teaspoon of nutmeg
- 100g of unsalted butter
- 2 quarts of vegetable oil

- Slotted Spoon
- Whisk
Steps
- Get a small bowl ,whisk together milk and vanilla extract until well combined and set aside .
- Get another bowl ,whisk together flour, sugar, baking soda, lemon, and nutmeg until combined.
- Using the large holes of a box grater, grate butter over flour mixture.
- Use your hands, toss butter with flour mixture until butter is evenly distributed.
- Create a hole in the middle of the mixture that contains flours-butter.
- Slowly pour the first mixture into the second one ,then mix properly.
- Use your hand to knead the dough against sides of the bowl and put flour on the surface.
- Cover the dough with kitchen tower and leave it to rest for 10 minutes.
- On the light-floured work surface ,divide dough into 4 equal potions ,and shape each into a ball.
- Working with one ball of dough at a time , roll out dough to form a 5-inch circle about 1/4 inch thick, adding more flour as needed underneath and on top of dough to prevent sticking.
- Using a sharp knife ,cut dough into 1/2-inch-wide diamonds, digging the knife in flour as needed to dough from sticking.
- Transfer dough pieces to a lightly floured rimmed baking sheet, dust with flour ,and gently toss to prevent sticking .
- Repeat with remaining dough balls.
- Line a large strainer with paper towels.
- Heat the pan to over medium high heat 180 degrees C .
- Divide the dough pieces into roughly 3 or 4 batches.
- Then start frying one batches at a time, use the slotted spoon to flip them to the other side when it turns golden brown, for 3 minutes.
- Transfer chin chin to prepared strainer.
